I hope he continues to like them. I often do make them with coconut oil and a mix of wheat and white flour. Pumpkin makes a great substitute. Is it normal for the dough to be drier? I used coconut flour and raw honey in place of sugar, would that maybe have something to do with it?? I was thinking of trying them with white whole wheat flour. These look great, and I plan to make them soon! Alyssa, These muffins look and sound so yummy.
